Breakfast Oatmeal Bars

These oatmeal bars are literally a freshly made breakfast oatmeal bowl to go. Perfect for those who are in a hurry in the morning and don't have time to cook or even sit down for breakfast. The ingredients are exactly the same: rolled oats, milk, nuts and dried fruit.
You can add whatever nuts or dried fruit you like. Peanuts, walnuts or pecans do it the same way as pistachios or almonds. Same applies to the dried fruit: you can probably throw in just anything and as much as you want according to your tastes. I tried a mixture of apricots, dates, raisins and prunes or you can just add one sort like raisins or cranberries or dried mango. Coconut also works well in it. Try it yourself, you can't really go wrong with this recipe. Either way, it will always be absolutely delicious.
I love the fact that it needs so little ingredients: no flour, no baking powder or any of the other usual suspects when baking. And, most importantly: no added sugar. Only natural ingredients. What else does one want or need? This is the perfect cookie for breakfast or as a snack.

BREAKFAST OATMEAL BARS
1 1/4 cups rolled oats
1/2 cup chopped nuts (e.g. almonds, walnuts, pistachios, pecans, peanuts)
3/4 cup dried fruit (e.g. dates, apricots, raisins, prunes, cranberries)
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/4 cups milk
1 teaspoon vanilla extract
Yields 16

Preheat oven to 180C/375F. Line 25x25cm baking sheet with parchment paper.
Mix all dry ingredients in a bowl and set aside. Mix wet ingredients. Pour wet into dry ingredients and stir to combine. Let the mixture soak for 10 minutes. Then pour into prepared dish and press down evenly. Bake for 35-40 minutes. Cut into squares while still hot. Let cool completely before storing in airtight container.

I just made these this morning, they turned out great! very delicious and super simple!
I used 1/2 cup pumpkin seeds and added half a cup of more rolled oats in place of the nuts and I used dried apricot for the fruit.

I made these and I don't know what happened. They turned out really soggy even though I cooked them for an hour and a half. I cannot figure out for the life of me what went wrong. My 5 year old daughter loved them though! She wound up eating the entire pan.
I am at a loss here, don't know what could have gone wrong. They not crispy, definitely not soggy in the middle either. Perhaps you laid them out too thick before baking? I am sorry the recipe didn't work out.
SUCH a good recipe!! I totally messed around with it, adding some ground chia and whatnot as well as extra nuts, and even a few choc chips (I know, I know). Also added an egg into the wet mixture, and low and behold even with all the "adjustments" they turned out perfect! This was my first time baking with dried prunes and they were SO good. Thanks for the amazing recipe, I'm making a double batch this time they're so good!
Does anyone know, do these have to be refrigerated after baking because of the milk?
Do non dairy milks work in this recipe?
I have never tried it with non-dairy milk, but i can imagine they work just as well.
This turned out soggy in the center. It's probably because I used an 8x8 pan. I tried cutting it into bars and baking it for for an extra 15 minutes to evaporate the moisture and it did help a little. Oh well, better luck next time. Good recipe though!
im going to try this this morning with almond milk and adding some soy protein powder.i hope i works out!
Just tried these. Yum! I added shredded carrots for a little veggie bonus. Another addition I used was 2 scoops of chocolate protein powder, so I used 1/4c more milk and probably another handful of oats. The choc. adds a bit of sweetness and of course the added protein. I didn't have any parchment paper, so I just greased the non-stick pan with coconut oil; however, I guess my non-stick pan isn't really "non-stick!" I have a bit of a mess to clean up!! Thanks for this recipe!

These are the easiest and best breakfast bars!! I added 1T of palm sugar, 2T flax seeds, and 2T olive oil -makes 'em crispy in the oven. SOOOOOOO GOOD!
I put them in the toaster oven to crisp before eating on the go -best 'pop-tart' ever.

Tried these out with 2 tablespoon sugar to create just the right amount of sweetness..Delicious!!
But they were really difficult to remove from the baking paper and quite thin for bars?

For next time, do you think it is possible to omit nuts, as my sister is alergic?
